On Thursday 21st February, Riddle & Finns will be joined by Springs’ Smokery and Court Garden (vineyard and winery, based in nearby Ditchling) for an evening to remember.
The seven course menu has been created by their talented Head Chef Mark Wadsworth following a day spent at Springs’ Smokery in Sussex learning about different smoking techniques, and features dishes such as cured sea trout and langoustine, diver caught scallop and suckling pig belly, and poached halibut. These dishes include a selection of Springs’ best produce and are accompanied by a wine pairing from Court Garden.
You will also have the opportunity to speak with Springs’ Head Smoker and Court Garden whilst sampling a selection of their wines.
