Following a few delays to their highly anticipated launch, Kindling Restaurant is now only a few weeks away from opening its doors.
With a mantra of ‘Good food, done well’, Kindling will launch with their seasonal menu which promises to surprise and delight with ‘being kind’ at the core of every creation.
In December, Kindling will be generously presenting one table, with a zero bill at the end of their meal!
What’s on the menu:
Diners can look forward to menu highlights such as Kindling’s moreish crispy pork skin and golden hash browns from the bar menu. Then there’s enticing and super seasonal plates, like the Roast delicata squash, gnocchi with ricotta and candied walnuts, or the Parsnip, russet & truffle terrine.
Then to the grill -where diners can enjoy the Old Spot Chop, the whole roasted cauliflower with caramelised hazelnuts and a whole flame-grilled Mallard with fermented plum. The fire adds a truly transformative flavour to these dishes. All are cooked with plenty heart, finesse and will promise to leave visitors happy and satisfied.
The Kindling concept is focused around food that is kind to the environment and good for the soul, with a determination of achieving minimal waste wherever possible. Its cooking embraces modern takes on traditional methods, cooking on an open grill to enhance flavour profile, alongside preserving and fermenting techniques to conserve the fruitful Sussex seasons. Diners can delight in only the best locally grown produce -making the simple spectacular.
Kindling’s owners, Ramin and Jane have an impressive track record having run the critically acclaimed Food for Friends restaurant for nearly 15 years, which firmly established itself as one of the UK’s leading and ‘trailblazing’ vegetarian eateries.
They sold Food for Friends last summer and have since been developing the Kindling concept.
“Our ethos is all about the thoughtful details and the stories behind our food and local producers. Throughout the last few months the team have been working extremely hard behind the scenes on all things Kindling. Despite a few unavoidable setbacks, we are now counting down the days to opening and we cannot wait to welcome customers from mid-December. With our open gril lat the heart of the restaurant, it will certainly be a fantastic place to retreat to this winter season for good food, good wine and generous Kindling hospitality.”
