The team have spent months developing their own pepperoni from scratch with Brighton charcuterie specialists Curing Rebels, using high welfare beef and pork, Calabrian chillies, and traditional fermentation, curing and ageing techniques, for a result that’s rich, smoky and warmly spiced, made specifically to work with their dough rather than just sit on top of it.
Layered on arrabbiata sauce, aged provolone, their own candied chillies and plenty of fresh basil, all on their signature dough, proved for at least 24 hours, stretched by hand and fired at high heat, so the pepperoni crisps at the edges and releases its oils across every slice. It’s Naples and New York in every bite, a classic reimagined, unmistakably Fatto a Mano.
Alongside it, from Monday 7th September, they’ve partnered with Campari on The Queen Negroni, their own Margherita pizza-inspired Negroni designed exclusively. Think olive oil washed gin, their Vesuvius tomato water, Campari, Martini Rosso and fresh basil.
Because it’s a big one, the team want to celebrate properly: every member of Fatto Pizza Club who books a table during the first week of the pizza and cocktail launch (Monday 7th to Sunday 13th September) will automatically be entered into a prize draw to win a Fatto-hosted trip to Milan.
